Eggplant belongs to the nightshade family of vegetables, which includes tomatoes. Like unripe tomatoes, raw eggplant contains solanine, a compound that is toxic to dogs. Dogs should never eat raw eggplant. Cooking an eggplant reduces the levels of solanine. Dogs should never eat fried eggplant, or any other type of food fried in oil or with any seasonings. Giving a dog too many carbohydrates can result in obesity or other health problems, and diabetic dogs should never eat eggplant because they can cause blood sugar spikes. Dogs can eat small amounts of bite-size pieces of plain, unseasoned, unsalted, cooked eggplant.
